The Aji Panca is a chili pepper originating from Peru and also known by the name of Aji Brown. Chilli peppers are quite large in size, in fact they reach a length of about 13 centimeters with a maximum diameter of 4 centimeters, their shape is elongated and curved, often flattened. They have a smooth and regular surface, have thin walls and are not very rich in placenta, a characteristic which makes them very easy to dry. During maturation they go from green to dark green to dark brown. Aji Panca is widely used in Peru in many recipes, together with Aji Amarillo. It is included in almost every dish, given its spicy flavors and its very light spiciness which perfectly accompanies pasta and meat and fish dishes. It can also be easily reduced to powder or sauce or dried.
