Giant Parsley, as the well-known proverb says, looks good on all dishes, the leaves and stems are the parts used, both for fresh consumption and for the preparation of Sauces, Soups and Fish. For example, it is used chopped to add to salads or clam sauce or vice versa with whole leaves in roasted fish. It has a pungent and slightly bitter taste that enlivens the flavor of other herbs.

Parsley is rich in Vitamin A, B, C and K and mineral salts such as Potassium, Calcium and Iron; it acts positively on the liver functions helping the purification of the organism; it is also rich in antioxidant substances; the pounded leaf wrap is used to relieve mosquito bites; it has diuretic and sudoriferous properties, mainly due to a flavonic substance: the apiosid. In Chinese herbal medicine it is also used as a remedy for high blood pressure.
