The Black Tomato from Santiago is an ancient and exquisite variety of dark tomato that risked extinction in 2012, in fact at the time only a few farmers in Galicia, Spain, kept the precious seeds, then spread again thanks to the CIAM, Centre for agricultural research in Mabegondo, in the province of La Coruña. The Black Tomato of Santiago produces many fruits of medium size weighing 100/200 grams, has an irregular shape of dark red color, fleshy pulp, intense flavor like all Black Tomatoes, high level of acidity, very resistant plant, Tomatoes they are eaten fresh cut into slices and without seasoning, just a few grains of salt, given the great goodness, they are also used to make Preserves and Jams to accompany with Cheeses, really among my favorites together with the Indigo Rose Tomato and the Green Zebra Tomato, word of Carlo Martini.
