The Aji Cristal is a delicious Chilean origin Pepper belonging to the Capsicum Baccatum family. It has fleshy fruits with a delicious citrus flavor, ideal for sauces and jams, fish dishes, pizza and pasta; during ripening the fruits change from green to light yellow up to an orange that becomes very intense up to red, very beautiful aesthetically. It should be noted that the flavor has different nuances depending on the degree of ripeness, from harsher tones to more spicy hints. The most common use that is made in Chile of Aji Cristal is the famous "Pebre" which would be the Chilean version of the "Pico de Gallo" that is made in Mexico, made with Aji, Olive Oil, Garlic and Coriander.
The plant is large, like all Baccatums, if grown in the open field it can reach up to 2 meters in height, the stem is very resistant, but with growth it may be necessary to reinforce the structure with supports. If you grow it in pots I suggest a pot with a capacity of 15 - 20 liters.
